MASHED POTATO CASSEROLE 
5 lbs. potatoes, cooked and mashed
1 stick butter
2 (3 oz.) pkgs. cream cheese
Salt and pepper
1 1/2 c. milk, start with 1/2 c. (depends on potatoes)

Cook and mash potatoes; add butter, cream cheese, milk, and salt. Put in buttered casserole. Cover with plastic wrap, foil, and refrigerate. To serve, dot with butter. Bake at 350 degrees about 1/2 hour. Can be prepared a day or two ahead of time.
