ZUCCHINI & GREEN RICE 
1 1/2 lbs. zucchini
3/4 c. chopped parsley
Juice of 1 lemon
1 c. low-fat cottage cheese
1 tsp. salt
Pinch of pepper
1 tsp. basil
2 tbsp. oil
2 c. cooked brown rice
1/2 c. grated cheddar cheese
2 tbsp. grated Parmesan cheese

Slice zucchini in 1/4 inch rounds. Steam until done but still firm. Preheat oven to 350 degrees.

Mix rice with lemon juice, parsley and seasonings. In a greased casserole make a layer each of rice mixture, cottage cheese and zucchini. Top with grated cheese. Bake, uncovered for 10 to 15 minutes. Sprinkle with Parmesan cheese. Serves 4 to 6.
