RICE AND ZUCCHINI CASSEROLE 
1 1/2 c. cooked instant rice
3 chopped green onions
1 lb. cubed zucchini squash
1 c. grated cheese
3 eggs
1/4 lb. butter
1/2 green pepper
1/2 - 1 tsp. curry powder
Salt & pepper to taste

Beat eggs and mix with rice. Add cheese and the rest of the ingredients, pour into slightly greased 12" x 7 1/2" x 2" baking dish. Bake at 350 degrees for 20 minutes.

Cook squash, uncovered in boiling salted water 5 minutes, drain well, before adding to other mixture.
