ZUCCHINI RICE 
2 c. sliced zucchini
1/2 c. uncooked rice
1/4 c. diced onion
1/4 c. parsley
1 clove grated garlic
1/2 tsp. salt
3/4 c. boiled water
3 beaten eggs
1/2 c. milk
1 c. grated cheese

Combine zucchini, rice, onion, parsley, garlic and salt in pan. Add water; bring to a boil. Lower heat, cover and cook 15 minutes. Combine eggs and milk. Add to zucchini mixture. Pour into buttered 8 x 8 inch pan (cover with cheese). Bake at 350 degrees for approximately 30-35 minutes. Serves 8.
