ZUCCHINI BROWN RICE BAKE 
2 c. zucchini, thinly sliced
3/4 c. packaged precooked brown rice
1/2 c. parsley, chopped
1/4 c. onion, chopped
1/2 tsp. salt
3 eggs, beaten
1/4 c. milk
1 c. cheese, grated

Combine zucchini, rice, parsley, onion and salt with 3/4 cup of boiling water in saucepan. Cook, covered, for 15 minutes. Beat eggs, milk and cheese together; stir into zucchini mixture. Pour into baking dish. Bake at 350 degrees for 35 minutes, or until set.
