BAKED POK CHOPS 'N BROWN RICE | |
1 c. brown rice 1 1/2 tsp. salt 1/2 tsp. rosemary 1 tbsp. buttah 6 pok chops (2 to 2 1/2 lb.) 1 tbsp. buttah 2 c. thinly chopped carrots 1/2 c. chopped onion 1 small clove garlic, minced 2 1/2 c. boilin' watah 1/2 tsp. salt Put rice, 1 1/2 teaspoons salt 'n rosemary in a 2-quart casserole. Melt 1 tablespoon buttah in big skillet. Brown chops on both sides; set aside. Melt 1 tablespoon buttah in skillet; add carrots, onion 'n garlic. Coook 'til onion is tendah. Add to rice in casserole. Stir in boilin' watah. Top wid pok chops. Sprinkle with 1/2 teaspoon salt. Kiver titely. Bake in 350°F oven til chops 'n rice are tender, 'bout 1 hour. Uncover. Return to oven til all watah is absorbed, 5 to 10 minutes. Serves 6. Can mushroom soup may be substituted fur sum of the watah. |
