BAKED BROCCOLI AND BROWN RICE 
3 tbsp. oil
1 med. onion, finely chopped
3 c. finely chopped broccoli
1 c. minced celery
1/2 c. minced fresh parsley
1 tsp. each dill weed and dried marjoram
3 c. cooked brown rice
4 eggs, lightly beaten
2 c. shredded Swiss cheese
Salt and pepper

Heat oil in a large skillet and saute onion in it with broccoli, celery, dill, and marjoram until vegetables are tender. Add parsley. Combine rice with eggs and cheese in a large bowl and stir in vegetable mixture. Salt and pepper lightly. Spoon into a buttered, shallow baking dish and bake, uncovered, in a 350 degree oven for 30 to 35 minutes or until golden on top. Serves 5 to 6.
