SPICY BAKED FISH | |
1 lb. cod fillets, fresh or frozen, without skin 1/4 c. onion, chopped 1/4 c. green pepper, chopped 2 tsp. oil 1 (8 oz.) can tomatoes 1/4 tsp. salt 1/8 tsp. pepper Thaw frozen fish. Grease 9 x 9 x 2 inch baking pan lightly with 1/2 teaspoon of oil. Cut fish into 4 servings. Place in baking pan. Bake in 350 degree oven until fish flakes easily, about 20 minutes. Drain cooking liquid from fish. While fish is baking, cook onion and green pepper in remaining oil until onion is clear. Cut up large pieces of tomatoes. Add tomatoes, salt and pepper to cooked onions and green peppers. Cook 20 minutes to blend flavors. Pour sauce over drained fish. Bake 10 minutes. Serves 4. |
