BROCCOLI & RICE CASSEROLE 
1 c. rice
2 1/2 c. water
1 onion, chopped
1 tbsp. oil
1/4 c. milk
1 can cheddar cheese soup
1 can cream of chicken soup
Salt to taste
1 sm. can sliced mushrooms
2 bags frozen broccoli

Cook rice in water. Put in greased casserole dish, 13"x9"x2". Brown diced onion in oil. Add cheese soup, milk and cream of chicken soup. Cook the broccoli. Put over rice. Pour cheese sauce over broccoli and top with mushrooms. Bake at 350 degrees for 30 minutes.
