STUFFED SNOW PEAS | |
1 (3 oz.) pkg. cream cheese, softened 1/3 c. finely chopped walnuts 3 tbsp. finely chopped green pepper 2 tbsp. finely chopped onion 1 1/2 tbsp. chopped pimento, drained 1 1/2 tbsp. catsup 1/4 tsp. salt 1/4 tsp. pepper 2 1/2 dozen young tender snow peas Cherry tomatoes Fresh parsley sprigs Combine first 8 ingredients, mixing well. Spoon mixture into covered container. Chill at least 1 hour. String snow peas, and blanch in boiling water 30 seconds. Plunge into cold water; drain. With a small knife, slit open the straight side of each snow pea. Spread about 1 1/2 teaspoons filling into each snow pea using a small spatula. Arrange on platter garnished with cherry tomatoes and parsley. |
