STUFFED SNOW PEAS | |
2 doz. fresh snow peas 3/4 c. softened and whipped cream cheese 1 1/2 tsp. horseradish 1/8 tsp. pepper 2 tbsp. finely chopped onion 6 slices cooked bacon, finely chopped Trim ends from snow peas. Place peas in a steaming basket. Plunge basket into boiling water and remove immediately. Place snow peas in bowl of ice water and refrigerate. Combine cream cheese, horseradish, pepper and onion. Stir until smooth. Chill 1 hour. Use a sharp knife to carefully slit one side of each pea pod. Spoon cream cheese mixture into decorating bag fitted with decorative tip. Pipe approximately 1 1/2 teaspoons of mixture in each pod. Sprinkle with chopped bacon. Refrigerate until ready to serve. |
