BLENDER CHEESE PIE 
2 c. finely crushed graham crackers
1/2 c. melted butter
2 1/2 tbsp. sugar

FILLING:

3/4 lb. cream cheese
2 eggs
2 1/2 tbsp. milk
1/4 c. sugar
1 1/4 tbsp. lemon juice
1 tsp. vanilla
1 tsp. grated lemon rind

TOPPING:

1 c. sour cream
1/4 c. sugar
1 tsp. vanilla

1. Mix together the crushed graham crackers, butter and sugar. If the mixture is too dry, add a little more melted butter.

2. Firmly press on the bottom and sides of a 9 inch pie tin. Set aside.

3. Put the remaining ingredients into an electric blender and whirl for 1 minute or longer if all the ingredients are not completely blended.

4. Pour into the pie shell and bake in a 375 degree oven for about 23 minutes. Cool.

5. Make the topping by combining all the topping ingredients. Spread over the baked and cooled pie. Put in a 475 degree oven for 7 minutes. Cool and serve. Serves 8.
