BUTTERMILK BREAD 
1 c. buttermilk
3 tbsp. sugar
2 tsp. salt
1/3 c. butter
1 c. very warm water
1 pkg. yeast
5 3/4 c. sifted flour, more or less
1/4 tsp. baking soda

Scald buttermilk, add butter, sugar and salt. Cool to lukewarm. Measure water into large bowl and add yeast. Stir to dissolve. Add buttermilk mixture. Stir in 3 cups of flour and soda. Beat smooth. Add rest of flour to dough, a bit sticky. Knead until smooth and elastic on a floured board. Let rise until double. Punch down to let rest for 15 minutes, divide into 2 greased loaf pans. Let rise until double. Bake at 375 degrees about 35 or 40 minutes.
