BEEF TERIYAKI POCKETS
2 lbs economical cut steak
1 pkg pita pockets
2 cups shredded lettuce
1/4 cup mayonnaise
1 tbs cornstarch

Marinade:

Simply mix in plastic bag and add meat!

2 tablespoons low sodium soy sauce
1/4 cup sesame oil
2 tablespoons honey
1 tablespoon garlic powder
1 tablespoon ground ginger
1/2 teaspoon salt (optional)
1 tablespoon ground pepper
1 teaspoon celery salt
2 tablespoons brown sugar
4 tablespoons low salt chicken broth
reserve 1/4 cup for cornstarch sauce

Cut steak into small bite-sized pieces and put in plastic bag to marinate for at least 1 hour (preferably overnight).

Cut pita pockets into halves. Spread mayonnaise liberally and put 1/2 cup shredded lettuce inside, set aside.

In a very hot skillet, cook meat in small batches for just a few minutes each. When finished with meat, take reserved marinade and put into same pan. Scrape (deglaze) pan and add cornstarch over medium heat when starting to thicken. Add to meat and put meat into pockets. Enjoy!!
