PINEAPPLE UPSIDE DOWN CAKE 
3 tbsp. butter
3/4 c. brown sugar
6 slices pineapple or 2 1/2 c. chunk, well drained
Maraschino cherries

CAKE BATTER:

1 egg
1/2 c. butter
1/2 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk

Cream butter. Add sugar and beat well. Add egg and mix well. Add dry ingredients alternately with milk and beat until smooth, beginning and ending with dry.

In 9-inch cake pan, melt butter and sprinkle with brown sugar. Arrange pineapple and cherries on sugar mixture. Cover with cake batter. Bake at 375 degrees for 35 minutes. Let stand 4 minutes before turning onto cake plate. Serve with whipped cream, if desired.
