ASPARAGUS, EGG AND CHEESE
CASSEROLE
 
3 tbsp. butter
3 tbsp. flour
1/4 tsp. dry mustard
1/2 tsp. salt
Pepper
3-4 hard-cooked eggs
1 1/2 c. milk
1/4 to 1/2 c. grated cheese
1 bunch fresh asparagus, cooked or 1 med. can (can use broccoli)
1/2 c. crushed chips or bread crumbs

Make cheese sauce by melting butter, adding flour, mustard, and salt. Add milk, 1/2 cup at a time, and bring to a boil. Then add cheese and immediately remove from heat. Stir until cheese has melted. Taste and season.

Place thin layer of sauce on bottom of oven-ware dish and put asparagus on top, then sliced eggs. Continue to layer. Cover with chips or crumbs. Bake at 370 degrees for 20-30 minutes or until all ingredients are hot and topping golden brown. 4-5 servings.
