CHERRY DELIGHT 
1 c. flour
1 c. dark brown sugar
15 Ritz crackers, finely crushed
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
1 (3 1/2 oz.) can flaked coconut
1 tsp. vanilla
1 (21 oz.) can cherry pie filling

Blend together flour, brown sugar, crushed Ritz, soda and salt. Cut in butter until mixture resembles coarse crumbs. Add coconut and vanilla; stir to blend. Press half the mixture into 8 x 8 x 2 baking pan. Cover with cherry pie filling and top with remaining crumb mixture. Bake at 350 degrees for 30 minutes or until lightly browned.
