PEA PICKIN' GOOD CAKE 
1 box any good brand butter cake mix
3 eggs
1/2 c. cooking oil or 1 stick butter
1 can mandarin oranges, do not drain

FROSTING:

1 pkg. instant vanilla pudding mix
1 med. can crushed pineapple, undrained
1 lg. Cool Whip (12 oz.)

Mix the first four ingredient sin mixer on medium speed for two minutes (allow the oranges to mix -- use the juice as your liquid). Bake in three 8 inch well- greased cake pans for 25 to 30 minutes at 350 degrees. Cool completely.

Mix pudding and pineapple well. Mix in Cool Whip. Frost entire cake, between the layers, the top and sides. THIS CAKE NEEDS TO BE REFRIGERATED. IT MAKES A LARGE, DELICIOUS CAKE WHICH KEEPS FOR SEVERAL DAYS. IT ALSO FREEZES WELL.
