POLISH DUMPLINGS PINEAPPLE
UPSIDE DOWN CAKE
 
1/4 lb. butter
2 c. brown sugar
1 can pineapple rings
Maraschino cherries
2 1/2 c. flour
2 tsp. baking powder
4 eggs
2 c. sugar
1 c. milk
1 tsp. vanilla

Melt butter in large iron skillet. Cover bottom with brown sugar; add pineapple to cover bottom. Add cherries in each center. Sift together flour and baking powder. Beat eggs, add sugar and blend. Add flour mixture alternately with milk; add vanilla. Pour into skillet. Bake 45-60 minutes at 350 degrees. Immediately invert on large plate.
