PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. butter
3/4 c. brown sugar
1 can (15 1/2 oz.) pineapple slices, drained, reserving 1/2 c. juice
8 maraschino cherries, drained
1/2 pack 2 c. yellow cake mix
2 eggs
3 tbsp. vegetable oil

Preheat skillet to 250 degrees. Melt butter in hot skillet. Mix in brown sugar. Arrange pineapple slices over sugar mixture. Place a cherry in center of each pineapple. Turn skillet off.

Combine cake mix with 1/2 cup reserved pineapple juice, eggs and oil. Mix on medium speed for 2 minutes, scraping sides of bowl as needed. Spread batter evenly over pineapple slices in skillet. Turn temperature dial to 275 degrees. Place cover on skillet slightly ajar and bake for 30 minutes. Turn upside down onto serving platter.
