PINEAPPLE UPSIDE DOWN CAKE 
1 stick butter
1-1 1/2 c. light brown sugar
1 (15 1/4 oz.) can pineapple rings
Maraschino cherries

In large iron skillet, melt butter and brown sugar together. Arrange pineapple rings on top of sugar mixture (place cherries in center of rings) and cook until bubbly.

CAKE:

2 eggs, separated
1 c. sugar
1/4 tsp. vanilla
3/8 c. hot water
1 c. sifted plain flour
1 1/2 tsp. baking powder
Pinch of salt

Beat egg yolks well. Add sugar gradually. Add vanilla. Add hot water and mix well. Slowly add dry ingredients. Fold in beaten egg whites. Pour batter over topping and bake in skillet at 325 degrees for 50 minutes. Turn on cake plate to serve.
