PINEAPPLE UPSIDE-DOWN CAKE | |
1-1/4 c. sifted flour 1/4 tsp. salt 4 tbsp. shortening 3/4 c. sugar 1 egg, well-beaten 1-1/4 tbsp. baking powder 1/2 c. juice from pineapple (or milk if desired) Cream shortening and sugar. Add well-beaten egg. Sift flour, salt and baking powder together, add alternately with milk or juice. Mix shortening or butter and 1 cup brown sugar in skillet. Arrange 1 cup sliced or crushed pineapple, cherries or nut meats (may be used in iron skillet.) Pour batter over pineapple mixture and bake 350 degrees for 35 to 40 minutes. Turn upside-down on cake plate. |
