PINEAPPLE UP-SIDE DOWN CAKE 
1/4 c. butter
Sliced pineapple
1/2 c. brown sugar

Melt butter and sugar in skillet (I use iron skillet #8). Place drained pineapple slices and top with the following batter.

1 c. sifted flour
1 tsp. baking powder
3 eggs
1 c. sugar
2 tbsp. vanilla
6 tbsp. hot milk

Sift flour and baking powder together. Beat eggs until light. Beat 10 minutes. Add sugar gradually. Add vanilla. Fold in flour, small amounts at a time. Add hot milk. Mix quickly. Pour over pineapple. Bake at 350 degrees for 35 minutes.
