MILDRED'S ZUCCHINI SOUP | |
1 lb. hamburger 2 c. diced celery 1 lg. onion, diced 8 med. zucchini, diced 2 c. green peppers, diced 1 med. cabbage, grated 1 can mushroom (optional) 8 bouillon cubes 46 oz. can tomato juice 1/8 tsp. oregano 1/2 tsp. thyme, basil 1/2 tsp. salt, pepper & garlic to taste Bring 1 1/2 quart water to a boil. Add bouillon cubes. Add tomato juice, oregano, thyme, basil, salt, pepper and garlic salt. Simmer for 10 minutes. Add remaining ingredients, stirring well to break up the meat. Simmer 45 minutes, covered. Makes 7 quarts and freezes well. |
