FRIED RICE 
3-4 c. cold rice (cooked and cool)
1/2 stick butter
1/2 c. chopped onion
2 eggs, scrambled
soy sauce
chopped celery, peas, cooked carrots, optional

Melt butter in frying pan, add onions and any optional veggies. Stir and cook until tender. Push cooked veggies to side of pan- scramble eggs. Put cold cooked rice over top of eggs and veggies. Mix together, frying until warm throughout. Add soy sauce to taste. Can add cubes of cooked meat!
