LAMB CURRY 
2 lbs. lamb, cut into cubes
1 tbsp. oil
1 lb. onion, chopped
2 tsp. plain yogurt
1 sm. tomato, chopped
2 tsp. coriander powder
1 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. black pepper
1/2 tsp. ginger root, finely chopped
1/4 tsp. garlic, finely chopped
1/2 tsp. Garam Masala powder

Marinate the lamb with oil, onion, yogurt, tomato, the spices, ginger and garlic in a large bowl for about 15 minutes. In a deep pan cook the marinated meat on low heat, stirring for about 5 minutes. Add sufficient water to cover meat and simmer, covered for one hour. Stir occasionally.

Optional Addition: before serving, season with cumin seed fried in butter or ghee.

Per Serving: 380 calories, 46 gm. protein, 7 gm carbohydrates, 17 gm. fat, 6 gm. saturated fat, 142 gm. cholesterol, 132 gm. sodium.
