TURKEY MANICOTTI 
1/2 lb. ground turkey
1/4 c. chopped onions
2 garlic cloves, crushed
1 1/2 c. lowfat Mozzarella cheese
2 egg whites
1/4 tsp. oregano
1/4 tsp. pepper (or more to taste)
1/4 c. oat bran
1 pkg. frozen spinach, thawed and drained
2 c. meatless spaghetti sauce
1 (3.75 oz.) pkg. "stuff-a-roni" (8 manicotti)
Salt to taste

Spray skillet with nonstick cooking spray. Add onions, garlic, ground turkey and saute until done. Drain liquid, if necessary. Add spinach, oat bran, 1/2 cup Mozzarella cheese, egg whites, oregano, pepper and salt. Mix well.

Cook manicotti according to package directions. Fill each manicotti with turkey-spinach mixture. Arrange in a baking dish; pour spaghetti sauce over manicotti. Cover with foil and bake for 30 minutes. Uncover, sprinkle with remaining 1 cup Mozzarella cheese and bake for another 5 minutes or until cheese is melted and bubbly.
