SANTA FE STEW | |
1 - 2 lb. pork or beef cubes 1 med. yellow onion, chopped in lg. pieces Handful fresh cilantro, chopped 1 sm. can chopped green chilis 1 pkg. taco mix 1 pkg. (dry) HIDDEN VALLEY® Ranch style dressing mix 1 can whole kernel corn 1 can kidney beans 2 cans pinto beans 2 lg. cans stewed tomato Cook meat, onion, cilantro, chilis, taco mix, dressing mix and tomatoes on medium low heat until tender, about 1 to 1 1/2 hours. Add corn and beans (undrained) and simmer for about an hour. Sprinkle with grated cheese. Serve with Mexican Cornbread! |
