PORK ROAST DINNER 
1 (4 lb.) roast loin or pork
1 1/2 tsp. salt
1/2 tsp. caraway seed
1/8 tsp. pepper
1/2 c. chopped fresh onions
Butter
2 1/2 lb. sm. potatoes

Sprinkle pork with salt, caraway seed and pepper; place in shallow baking pan. Bake at 325 degrees for 1 hour. Pour off excess drippings. Saute onions in butter in skillet. Add to roast. Add small amount of water. Bake for 30 minutes longer. Pare potatoes, cook in boiling salted water in covered sauce pan for 8 minutes; drain. Place potatoes around roast, bake for 1 hour, turning occasionally. Place pork and potatoes on heated serving platter, garnish with parsley. Yields 4-6 servings.
