CHEESY BURGERS 
The addition of grated Parmesan cheese and red onion turns these burgers into a rather flavorful and interesting dish. Serve on buns or just plain with buttered broccoli or cauliflower. For 4 servings you will need:

1 1/4 lb. lean ground beef
1/4 c. dry bread crumbs, plain or Italian type
1 egg, beaten
2 tbsp. finely chopped red onion
1 tbsp. soy sauce
1 tsp. dried oregano leaves
1/3 c. grated Parmesan cheese or other cheese
Dash black pepper
1/2 c. half & half
1 tbsp. butter
Red onion rings
Green pepper rings
Tomato slices

1. Combine meat, bread crumbs, egg and red onion.

2. Add soy sauce, oregano, cheese and pepper, mixing well with your hands. Add half & half.

3. Shape meat mixture into 8 patties.

4. Fry in a little butter over medium heat, turning once, to a crispy brown with a juicy center, about 5 minutes on each side.

5. Put patties on a platter. Layer red onion rings, green pepper rings and tomato slices on top. Sprinkle with grated Parmesan cheese.

Tips: If you like blue cheese you can add 2 to 3 tablespoons grated blue cheese into meat mixture. Omit soy sauce and use only 1/3 cup half & half.

For 2 servings: Half of the ingredients. For 8 servings: Double the ingredients.
