1 (16 oz.) pkg. extra sharp cheese
1 (16 oz.) pkg. med. cheddar cheese, shredded
1 sm. onion, grated
1 c. mayonnaise
1 tsp. red pepper
Strawberry preserves
Parsley
Chopped pecans
Ritz crackers

Combine first 5 ingredients and mix well. Sprinkle chopped pecans generously around middle of 7 cup ring mold that has been sprayed with Pam. Press cheese mixture into mold and chill until firm. This can be made 48 hours before serving unmold on platter and garnish with parsley. Place strawberry preserves in middle of cheese ring. Serve with Ritz crackers.
