MOLDED CHEESE RING 
6 to 8 c. grated sharp & mild cheese (3 to 4 8 oz. block of cheese)
2 to 4 tbsp. mayonnaise
2 c. chopped green onions
2 c. chopped pecans

Spray a large Tupperware mold with Pam. (Cheese ring is easier to remove from a flexible mold.) Mix all ingredients to a nice consistency. Press into the mold. Prepare 2 to 3 days ahead to enhance the flavor.

Unmold the ring on a pestal or footed dish. Top with strawberry preserves and garnish with mint and fresh strawberries. Also, apricot preserves and fresh apricots are lovely. Serve with crackers.
