JAPANESE SUKIYAKI 
1 c. Minute Rice
1/2 lb. thin sliced rare roast beef (delicatessen-type)
4 lg. mushrooms
3 (5 inch) pieces celery
1/4 lb. fresh spinach
4 scallions
1 med. size onion
3 tbsp. salad oil
1/2 of 10 oz. can consomme
2 tbsp. sugar
4 tbsp. soy sauce

Cook rice according to package directions. Peel and slice onion and mushrooms. Put iron or other heavy skillet on medium heat. Add salad oil, onion, mushrooms and roast beef to skillet. Slice thoroughly- washed spinach into 1-inch strips and add to skillet along with celery and scallions, sliced thin. Add soy sauce, sugar and consomme to skillet. Stir. Cook for 2 minutes. Stir again. Serve hot over the rice. (Serves 2, just double amounts for 4, etc.)
