BAKED BUTTERNUT SQUASH 
1 lg. butternut squash pared and cut into 1 inch cubes (remove seeds and fibers)
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/3 c. brown sugar
1/3 c. butter, melted
2 tsp. lemon juice (fresh is best)

Place squash cubes in a 2 quart casserole or baking dish. Sprinkle with spices and brown sugar. Drizzle with melted butter and lemon juice. Bake uncovered in 375 degree oven for 45 minutes or until tender. Makes 4 servings.

This was really good! My husband really really doesn't like squash. He walked in the door today after work and said "That smells delicious!!!" When I informed him it was squash he said "TRICKERY!!"... haha... so at dinner he ate all his squash before any other food and asked if there was any more! Thank you!!!

Delicious. Since I prefer not to go the sweet route, I made this dish with 1/3 cup butter, juice of half a lemon, dill, parsley, salt, pepper and a few drops of balsamic vinegar. It smells wonderful as it is cooking, and tastes even better.

Make sure to cube the squash small or it will take much longer to bake. Definitely used less butter and not noticeable with the other adds. I spread marshmallow creme over the top after baking, my family was raving and asking for more. I will probably make it again at Christmas.

My friends loved the recipe, but because my oven was being used, I boiled the squash then baked it just enough to melt the butter and sugar and to form a delicious crust.

This is the recipe I was looking for. For some reason I couldn't remember if the squash was to be pared or not. I like the idea of the nutmeg and the cinnamon with the brown sugar. This is going to be on my table this Christmas with the crockpot pork.

I have a similar recipe which I cannot find but I do know that at the last 10 minutes of baking it called for rice krispies cereal and walnuts on top. This dish is a favorite in my family.

Very easy to prepare. Fantastic dish. You could go less on the butter and be absolutely fine. It really only serves 4. Easiest to buy already cubed squash at the store than cubing it yourself.
