MEATY STUFFED POTATOES | |
4 med. baking potatoes 1/2 c. sour cream 3 tbsp. milk 1/4 tsp. salt 1/4 c. shredded cheese (American, Monterey, or Cheddar) 1 1/2 c. cubed, cooked beef 1/4 c. sliced green onions 1/4 tsp. garlic powder 1/4 tsp. pepper Scrub potatoes; prick with a fork. Bake at 425 degrees for about 60 minutes or until tender. When cool, slice off tops of potatoes. Scoop out centers, leaving 1/4" thick shell. In a bowl mash the potato centers. Stir in meat, sour cream, onion, milk, garlic, salt and pepper. Fill potato shells with mixture. Place in shallow baking dish. Bake about 30 minutes or until heated through. Sprinkle with cheese. |
