OATMEAL MUFFINS 
1 c. oatmeal
1/2 c. brown sugar
1 c. buttermilk
1 egg
1/4 c. melted butter
1 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda

Can substitute 1 tablespoon vinegar and 1 cup milk

Pour buttermilk over oats and brown sugar. Let stand 5 minutes. Add egg and butter and blend well. Sift together dry ingredients and stir into oat mixture. Spoon into muffin tins and bake at 375 degrees for 20 to 25 minutes. Makes 1 dozen.
