YORKSHIRE PUDDING 
2 cold eggs
1 c. milk
1 c. flour
Salt & pepper to taste
Shortening

Place 1 tablespoon shortening into each of 12 sections of muffin tin. Place in hot oven until melted. Combine eggs, milk, flour, salt and pepper. Beat with wire whip. Ladle into muffin tin. Each section should be 1/2 full. Bake at 425 degrees for 1/2 hour. Serve with roasted beef or pork. Yield 12.
