BROCCOLI WITH SHRIMP 
1 lb. shrimp
1 tbsp. sherry
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. cornstarch
1 head broccoli
1 tsp. salt
1/2 tsp. sugar
1/4 c. chicken broth
5 tbsp. oil

Shell and devein shrimp. Split in half, wash and dry with paper towel. Mix them with 1/2 teaspoon salt, sherry, pepper and cornstarch. Cut broccoli flowers from stems. Cut large florets into 2 to 3 pieces. Slice stems in 1 1/2 x 1/2 inch size. In large saucepan, or wok, heat 3 tablespoons oil and stir fry broccoli for 1 minute. Add remaining salt and chicken broth and cover pan for 1 minute. Uncover pan and cook for 2 minutes. Dish out. Set aside. Use same pan or wok, heat 2 tablespoons oil. Add shrimp and stir-fry until shrimp turns color. Add cooked broccoli. Dish out. Serve hot.
