JOHN'S KICKIN' ITALIAN SAUSAGE 
Delicious.. Great with potato salad and an ice cold beer.. Great for tailgating.

12 to 15 hot Italian sausages
2 env. Ortega (or your favorite) fajitas seasoning mix
1 (10 oz.) can Rotel tomatoes and chiles, drained
1 large Vidalia onion, julienned
1 large yellow bell pepper, julienned
1 large red bell pepper, julienned
3 cloves garlic, diced
1 tbsp. soy sauce
2 (12 oz. ea.) cans of Michelob amber bock beer
5 tbsp. butter
salt and pepper, to taste
large sausage rolls (1 per sausage)

Grill Italian sausages on charcoal grill (preferably for flavor, but gas grill is fine) on indirect heat for about 30 minutes. Remove from heat and set aside.

In a large aluminum (disposable) pan mix, 2 fajitas packets, can of Rotel, onion, yellow and red peppers, garlic, soy sauce, 2 cans beer, butter, and salt and pepper to taste. Mix all ingredients thoroughly.. Place sausages in pan with other ingredients and cover with aluminum foil.

Cook on hottest part of grill for approximately 1 hour and 20 minutes or until onions and peppers have cooked down.

Place sausage on sausage roll and top with onions peppers garlic, etc.. Enjoy!!
