9 1/2 MINUTE CAN'T FAIL HOLIDAY
FRUITCAKE
 
2 1/2 c. sifted flour
1 tsp. baking soda
2 eggs, lightly beaten
1 jar (28 oz.) None Such ready to use mincemeat (I use Borden)
1 can Eagle Brand sweetened condensed milk
1 c. walnuts, coarsely chopped
2 c. (1 lb. jar) mixed candied fruit

Butter 9 inch tube pan or springform line with wax paper, butter again.

Sift flour and baking soda. Combine eggs, mincemeat, Eagle Brand sweetened condensed milk, walnuts and fruits. Fold in dry ingredients. Pour into pan.

Bake in slow (300 degree) oven for 2 hours until center springs back and top is golden. Cool. Turn out. Remove paper. Decorate with walnuts and cherries.

Excellent fruitcake, easy to make and delicious. I made it many years ago with great reviews, but lost the recipe. Thank goodness for the internet because I just made it again and it was just as good as I remember.

Fruitcake is mocked by many. They should try this recipe. My family loves this fruitcake recipe. I have been making it for many years. Make around Thanksgiving, wrap well in heavy duty foil and store in a cool place. Becomes much more flavorful and is not dry.

This Fruitcake has become a tradition for over 40 years in our family of nine. It is so moist because of the mincemeat that it doesn't need to be "cured" for a month or more like some other Fruitcakes.

I've only been making this fruitcake recipe for a couple of years, but it has become a holiday favorite. I make my own mincemeat using venison, my grandmother's recipe, when I can get it. The homemade mincemeat enhances the fruitcake so much. Of course I usually have at least 1 bottle of brandy in each batch of mincemeat. I'm starting to get requests for fruitcake right after Halloween.

I have been making this Delicious Fruitcake since Dec since December 23rd, 1965. I was 18 years Will old. Will be 60 years this December. IT IS THE BEST!!I have added a few other goodies this Delicious to it. I give these as presents, my Christmas list friends ask me for it. Bake it, and; you can't go wrong! My attorney & his wife, expect it every Christmas.
