“TROPICS PANCAKES” IS IN:

TROPICS PANCAKES 
2 cups self rising flour
2 eggs, beaten
2 tsp. baking powder
1 cup milk
3 to 4 small to medium peeled and processed apples or 1 c. applesauce
4 tbsp. brown sugar
1 1/2 tsp. cinnamon
2 tbsp. vegetable or light olive oil

Apricot Sauce:

1 small can apricot halves in syrup
1 tbsp. cornstarch
1 tbsp. butter

To make sauce:

Process apricots and juice with 1 tablespoon corn starch until smooth (be sure there are no pits!). Heat apricot sauce in microwave for 5 minutes on high, or until bubbly. Add 1 tablespoon butter and swirl until melted. Serve over hot pancakes (see below).

Pancakes:

Rinse food processor or blender bowl out with water.

Wash and peel apples and remove cores. Process in food processor or blender until smooth. Add all remaining ingredients (except apricot sauce).

Pour small circles of batter onto a hot griddle or skillet and flip pancake when edges have small bubbles, about 1 minute for each side or until golden brown.
