APPLE - CINNAMON PANCAKES 
1 c. all-purpose flour
1 c. whole wheat flour
3/4 c. granulated sugar
2 tbsp. baking powder
1 tsp. cinnamon
dash of salt
1 3/4 c. milk
1 tsp. vanilla extract
2 eggs
1/2 stick butter, melted
2 medium apples, peeled, cored and chopped

In a large bowl, stir together flours, sugar, baking powder, cinnamon and salt. In a separate bowl, whisk together milk and eggs. Pour milk mixture into flour mixture and stir until relatively lump free. Whisk in melted butter, then add apples. Spoon onto hot griddle. Serve with Spiced Cider Sauce.

Makes 4 to 6 servings.

Spiced Cider Sauce:

1/2 c. granulated sugar
2 tbsp. cornstarch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. apple cider
2 tbsp. lemon juice

In large saucepan, stir together first four ingredients. Add cider and lemon juice. Cook, stirring constantly, until sauce thickens and boils. Boil and stir for 1 minute. Serve hot over pancakes or waffles.
