NEW ENGLAND APPLESAUCE PANCAKES 
1 1/2 c. all purpose unbleached flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking soda
1 tbsp. sugar
1 egg, beaten
3 tbsp. butter
1 c. apple sauce
1 c. yogurt

Sift dry ingredients together. Beat together the egg and yogurt, butter and applesauce. Add liquid ingredients to the dry and stir until they are mixed. Drop the batter by spoonsful onto a hot griddle or frying pan. Cook over moderate heat until the top is full of tiny bubbles and underside is browned. Turn and brown other side. Serve hot with applesauce or maple syrup.
