OATBRAN BANANA PANCAKES 
1 c. oat bran
1 c. flour
2 tsp. baking soda
1 tbsp. sugar
1 extremely ripe banana (1/2 c.)
2 tsp. vanilla
1 1/2 c. yogurt
4 egg whites
2 tbsp. butter, melted
Warm syrup
1/2 c. chopped pecans (1/2 c.)

In medium bowl, toss flour, oatbran, soda and sugar. Using wooden spoon, stir in banana and vanilla. Add yogurt. In a separate medium bowl beat egg whites until soft peaks. Beat 1/3 into batter. Fold in remaining egg whites with spatula. Fold in melted butter. Ladle 1/4 cup into skillet spreading to 3 1/2 to 4 inch circles. Cook 1 minute on each side. Serve with pecans and warmed syrup.
