BANANA NUT PANCAKES 
2 extra ripe med size. bananas
1 egg, slightly beaten
3/4 c. milk
1 tbsp. vegetable oil

Puree bananas in blender (1 cup). In a medium sized bowl, combine bananas, egg, milk, and oil. In a large bowl combine pancake mix, nuts and cinnamon. Stir banana mixture into dry ingredients until just moistened. Lightly grease and heat a skillet. For each pancake, pour out 1/4 cup batter. Brown over medium heat until bubbles appear on surface. Turn and brown on other side. Serve with whipped butter and warm maple syrup. Serves 6.
