BANANA PANCAKES 
1 c. whole wheat pastry flour
2 tsp. baking powder
1 1/2 c. nut milk, rice milk, or fruit juice
2 tbsp. unsweetened applesauce
1 med. banana (firm but ripe), finely chopped

Mix flour and baking powder together. Mix liquid with applesauce. Add to dry ingredients and stir until just moistened. Fold in banana. Spoon batter onto a non-stick griddle. Turn when bubbles appear.
