LAMB MEAT WITH BULGHUR WHEAT 
2 lb. finely ground lamb
2 c. fine bulghur wheat, soaked in 2 c. water
1 tbsp. dried mint
1 tbsp. salt
1 tsp. black pepper
1 tsp. allspice
2 med. onions, grated
Cold water

Put lamb meat in large mixing bowl. Squeeze out water from wheat and add to meat and mix well. Add seasonings and use a little cold water to mix and knead thoroughly then feed meat mixture through a meat grinder to mix completely. Again knead and add cold water until mixture is the proper consistency, soft to the touch. Adjust seasoning to taste. If leftover this mixture can be shaped into patties and fried.
