CHILLED CUCUMBER SOUP 
1 lg. cucumber
1/2 clove garlic, mashed
Dash of pepper
Dash of lemon juice
2 c. plain yogurt
Few dill or mint leave

Peel, seed and shred cucumber and mix with garlic, pepper, lemon and yogurt. Taste and adjust seasoning. If too thick, add a little cold milk. Keep well- chilled. Place in wide-necked thermos to take to picnic area. Top each serving with a sprig of dill or a few mint leaves. Accompany with rice cakes or whole wheat crackers.
