POTATO OMELET 
1 sm. onion
1 med. potato
3 tbsp. green pepper, chopped
3 eggs, beaten
1 tsp. salt
1/8 tsp. pepper
3 tbsp. butter

Peel onion and potato and slice thin. Cook onion, potato and green pepper in butter until tender. Combine eggs and seasonings. Add to vegetables and cook over low heat until eggs are set. Fold over (you can melt cheese in between the folds.) Serve with crunched bacon sprinkled over omelet.
