POTATO OMELET 
2-3 battered eggs
2 tbsp. onions
2 lg. potatoes, sliced and fried (cube cut)
4 tsp. salt
4 tsp. pepper
1 stick butter

First, in large fryer, heat 1/2 of the butter. Next, cube cut 2 large potatoes. Put in fryer to cook. Beat 2 or 3 eggs. when the potatoes are done, pour in eggs over the cooked potatoes. Add salt, pepper, then onions. Let cook until ingredients allow you to fold one half of omelet over on the other half. Keep flipping until the omelet is ready.
